Ayam Bumbu Bali

My goal is to be able making every of Indonesian dishes, so please bear with me. Today I made another spicy dish; Ayam Bumbu Bali, the combination of sweet - sour and hot!



Ingredients

1 chicken cut into 12 parts
1 tbs lemon juice
1 tsp salt
2 bay leaves (daun salam)
3 lime leaves (daun jeruk)
1 cm galangal (lengkuas), crushed
2 tomatoes, cut into small pieces
2 tsp soy sauce (kecap manis)

Spices (blended)

8 red onion
4 garlic
2 cm ginger
10 red chilli
Broth
1 tsp salt
3 candlenut (kemiri), -saute without oil

Directions

1. Coat chicken with lemon and salt to remove the fishy smell. Let it for 15 minutes and then fry and set aside.
2. Saute spices, let marinade. Add galangal, lime leaves, soy sauce, tomatoes, bay leaves,mix well.
3. Add the fried chicken, gradually add water while keep stirring.
4. Cook for another 5 minutes.
5. Remove the heat and ready to serve with hot rice.
